You can create fresh pasta in about 15 to 20 minutes with a minimal manual effort by using the Philips Pasta and Noodle Maker. It does everything from kneading pasta dough to shaping and extruding noodles.
Ingredients
Make 600 grams of flour with the following (for 5 to 6 people)
- 400 grams of fine semolina flour
- 190 grams of bread flour (T65)
- 10g gluten flour
- 216ml (2 eggs + water)
- Salt, granular (3 g)
Grain ingredients for 500g of flour (for 4 to 5 people)
- 30g fine semolina flour
- 162 grams of all-purpose flour (T65)
- Eight grams of gluten-free flour
- Two eggs and water equals 180ml.
- Salt Crystals, 2.5 Grams
Composition of 400 g (for 3 to 4 people)
- You can get 270g of fine semolina flour
- Flour for baking bread, 123 grams (T65)
- 7g Gluten Flour
- Two eggs and water (or one egg and water) equal 144ml.
- 2 grams of powdered salt
Instructions
- In a dish, combine the dry ingredients (the semolina, the bread flour, and the gluten flour). Move the spaghetti to the “Philips Pasta Maker,” which should already be fitted with the spaghetti extrusion plate. Close top.
- Place the 216 milliliters of water and the two eggs in a small cup, give it a good stir, and set it aside. Start the machine and adjust the settings so that they correspond to the amount you intend to produce. Hit the Launch button.
- Pour the water mixture into a slow stream through the hole in the top of the container.
- Within a few minutes, the material for the pasta will start to form, and then it will begin to extrude noodles. After cutting the first batch of noodles to a length of approximately 10 centimeters, place them once again in the mixing reservoir of the machine. This is due to the fact that the first noodle is not sufficiently smooth
- The noodles will then go through an extrusion process. The noodles should be cut every 35 cm (your choice).
- To prevent the pasta from sticking together, toss it with a little amount of potato starch (also known as katakuriko).
- Proceed until the machine comes to a complete halt.
